Igår gjorde jag hemmagjord falafel. Jag har hela tiden trott att det varit omständigt att göra falafel och jag har därför skjutit på att göra det, men ack så fel jag hade! Det är riktigt enkelt - mixa, forma, stek! Falafelsmeten/röran är väldigt kompakt och flyter inte alls ut när man steker den, som jag trott att den skulle göra. Om jag ska vara helt ärlig så smakar den man köper på diverse falafelhak (åtmintone här i Malmö) riktigt gott och väldigt likt min hemmagjorda, men då ska den också vara nyfriterad, och det är inte ofta man får det när man köper det ute. Dessutom tror jag inte att man kan välja denna fantastiska tahinisås till.

Ingredienser:

2,5dl torkade kikärtor, blötlagda i minst 12h

2 skivor vitt bröd, smulat utan kanter

4 vitlöksklyftor, grovt hackade

1dl persilja, grovt hackat

½ liten gullök, grovt hackad

1tsk bakpulver

1tsk spiskummin

1tsk 7 kryddor (libanesisk kryddblandning med bl.a. kryddpeppar, finns att köpa i butiker med sortiment från mellanöstern, kan ersättas med enbart kryddpeppar)

1tsk paprikapulver

Salt

Svartpeppar

Rapsolja

Tahinisåsen:

1dl tahini

1dl vatten

saften från 1 citron

2-3 vitlöksklyftor, pressade

Salt

Tillbehör:

Libanesisk vildgurka (eller saltgurka), skivad

Isbergssallad, strimlad

Tomat, urkärnad och hackad

Rödlök, strimlad

Pitabröd

När man gör falafel ska man inte använda kokta kikärtor, man ska ha "råa", blötlagda kikärtor.

Skölj de blötlagda kikärtorna väl och plocka bort eventuella missfärgade. Mixa kikärtor, persilja, gullök, vitlök, bröd och kryddor till en slät men ändå lite grov pasta. Den ska alltså inte vara som hummus, utan lite mer som grovkornig senap. Pulsmixa, det är en bra metod. Smaka av med salt och peppar och ställ kikärtspastan åt sidan och låt "marinera" i 30-60min. Jag lät min stå i 60min. Gör tahinisåsen under tiden så att den också får stå och få smak.

Rör runt i tahiniburken väl, det brukar skikta sig. Jag har 2 olika sorters tahini hemma, en från Kung Markatta som är ganska grov i konsistensen, och en som är slät och något mer autentisk från Libanon, av märket Al Wadi. Till denna såsen använde jag Al Wadi.

Som sagt, rör runt så att allt det goda inte ligger som en klump på botten av tahiniburken. Häll upp tahini i en skål, pressa i vitlöken och citronjuicen och rör. Du kommer märka hur den tjocknar och blir ljusare allt efter som du rör. Spä med vatten till önskad konsistens och smaka av med salt. Sätt åt sidan.

När falafelröran fått stå och vila 30-60min kan du blanda i bakpulvret. Rör om väl. Hetta generöst med olja i en stekpanna. Forma små biffar, ca 3cm i diameter och 1-1,5cm tjocka och stek mörkt gyllenbruna på båda sidor.

De tillbehör jag räknat upp är sådana jag använde. Jag älskar pickles i min falafel (älskar pickles överhuvudtaget faktiskt) och man kan egentligen använda vilken slags pickle man vill. Vildgurka hade jag aldrig hört talas om förut, men jag hittade en burk med "Libanesisk vildgurka" av märket Sevan i affären och tänkte att det kanske kunde funka till - och det gjorde det.
